Instructions
  1. Swede croquettes: Boil Swede until soft then mash into a smooth consistency. Cut up 1 slice of ham and 25g spring onions into thin strips then combine with the mashed swede. Season with salt and pepper then form into palm sized croquettes. Bake in oven until golden brown.
  2. Petit Pois Puree: Boil petit pois and once cooked blitz in the blender with garlic, parsley, fage and salt and pepper.
  3. Thai dipping sauce: Mix the soy sauce, water, lemon flavouring, chilli flakes, ginger, garlic, salt and pepper.
  4. Cod: Pan fry the cod for 5 minutes on each side on a medium - high flame. Season with salt and pepper. Top with chopped spring onion, red chilli and fried garlic
